«Cocina Gallega» is the traditional Galician cookbook by Álvaro Cunqueiro and Araceli Filgueira Iglesias, in paperback (87 pages).
A recipe book of traditional Galician cuisine and its products: Galician broth, lacón with grelos, empanadas, Padrón peppers, octopus, seafood, meats and vegetables. It also includes cheeses, cured meats, sweets and wines with designation of origin, and explains how to prepare the dishes with regional ingredients.
The original work, «A cociña galega», was published in 1973; this Spanish-language edition dates from 1985.
Álvaro Cunqueiro Mora was a Galician novelist, poet, playwright, and journalist. He is the author of many works in both Galician and Spanish, including Merlín e familia. He was a cofounder of the Galician Writers Association. In 1991, Galician Literature Day was dedicated to him.
